摘要:
The specific objective discussed in this paper was the description of vitamin and mineral supplementation practices of retired citizens. Eighty non-institutionalized, retired citizens between the ages of 58-88 were interviewed. Forty-nine percent used supplements. Most persons used only one supplement, which most frequently was a multivitamin preparation. The length of time of supplement usage varied considerably. The majority of the supplement users spent less than $4.00 monthly. Most of those who used supplements felt the supplements contributed to their health but nine of the 39 subjects took them because they felt they did not eat well. The most common sources for receiving information regarding supplement usage was the doctor or family/friends. There was similarity between usres and non-users of supplements as to their self rating of their overall health.

摘要:
The nutritional status of a defined group of 49 older men and women living in a non-profit life care retirement center was assessed by means of analysis of dietary intake from food records, anthropometry and biochemical indices. The individuals ranged in age from 70 through 91 years, were generally healthy, had attended college, engaged in professional careers and were of upper socioeconomic status. The mean energy and nutrient intakes were calculated from food composition tables and compared to the 1980 Recommended Dietary Allowances. Dietary, anthropometric and biochemical characteristics of these "advantaged" elderly persons were compared with the nutritional status of free living persons of low and middle socioeconomic status as reported in the literature. The "advantaged" elderly individuals generally had higher nutrient and energy intakes, less subcutaneous fat, lower serum cholesterol and higher serum ascorbic acid values. The apparently better nutrition status of the "advantaged" subjects could be attributed to their good health and appetities, regular physical activity, positive outlook on life, high degree of social interaction and educational attainment, and an income level high enough to permit them to reside in a center which provided total medical care, individual apartments and dining, social and sport facilities.

We surveyed 340 non-institutionalized elderly Asians and Caucasians to assess the extent of acculturation and its effect on the diet of elderly Asian-Americans. Findings of racial similarities included a high prevalence of social isolation, relatively low incomes, and dependence upon social services and public transportation. Racial differences were found in language and marital profiles (P<0.001), and dietary habits, including frequency of meals and snacks (P<0.01), variation of the diet (P<0.01), use of vitamin supplements (P<0.01), and avoidance of fatty foods (P<0.05). Differences in dietary intake were demonstrated by analysis of twenty-four hour dietary recalls. Asians were significantly more likely than Caucasians to have diets that were deficient in vitamin A (P<0.01), riboflavin (P<0.01), zinc (P<0.01), calcium (P<0.02), and magnesium (P<0.05). Also, elderly Asians were found to have higher sodium (P<0.05) with lower potassium (P<0.001) intakes and lower dietary fat (P<0.01) intakes than Caucasians. The difference in dietary intake between Asians and Caucasians were not due to reduced caloric intake by Asians. Results of the study indicate that elderly Asian-Americans have different diets than Caucasians, despite some acculturation or assimilation of certain American life-styles.
