摘要:
Pilot scale samn production was carried out in a dairy factory. Pasteurized butter, produced by concentrating and maturing cream, was used for samn preparation. Two batches of 100 units of 10 kg each were prepared with the use of a lipase (microbial lipase (EC. 3.1.1.3) type VII from Candida zeylanoides). The trials were monitored by free fatty acid (FFA) determinations using the gas chromatograph‐mass spectrometer system, and parallel sensory evaluations were carried out on the same samples. 摘要:
The customer is the key determinant of the success of a new product and customer needs must therefore be identified and integrated into the development of all new products at their design stage. Equally, the processor plays an important role by assuring that product quality engineering technology characteristics are identified, optimized and maintained on target with minimum variation. Quality function deployment (QFD) provides a systematic means of identifying customer requirements and translating them into achievable Product characteristics. Its use ensures more successful product development. This paper provides an overview of the QFD process and associated quality tools.

摘要:
The increasing availability of relatively low cost, portable and sensitive A T P bioluminometers has prompted exploration for other applications of A T P bioluminescence in the dairy industry. A protocol for detecting antibiotic residues in raw milk by A T P bioluminescence is described which is less complex than similar procedures described previously. The traditional assay based on acid production is slower and less sensitive but still has a significant cost advantage.
