摘要:
First of all I wish to thank all my friends in the Society for the honour accorded to me today, which will always be a source of pride and a reminder of times good and bad, but always rewarding, with an inner feeling of guilt that really it should have been shared with numerous colleagues who have helped so much in whatever I have tried to do. On an occasion such as this, some reminiscent ramblings seem more appropriate than a scientific contribution acceptable to the Editorial Board.For these I have chosen a title which seems to me to embody the changes many of us have seen in milk production, dairy technology and education.

摘要:
The importance of equality between EEC countries to provide for fair competition is emphasized and the gap between UK and other Community producers in costs and returns examined. Comparisons are made of climatic conditions, herd size, genetic quality of the dairy herd, utilization of artificial insemination for breeding, yields achieved/cow and the provision of dairy husbandry services, such as herd yield prediction from computerized records. The need for improvements in animal health in the UK, particularly eliminating brucellosis and controlling mastitis, is stressed. Transport and bulk collection of milk, standardization, retail distribution and the economics of processing and manufacturing are discussed. Tables indicate the level and trends in consumption of milk and dairy products, which are more encouraging in the UK than elsewhere in the Community. The need to improve the application of basis research findings is mentioned, as is the desirability of closer links between the industry and the Ministry. The author concludes that the UK industry has a competitive advantage that all involved in it should strive to maintain.

摘要:
A rotary milking unit, provided it is designed and planned correctly has advantages over a conventional fixed herringbone unit. Some of these are: a better working environment and a reduced work load on operators; facilities to practise a higher standard of stockmanship; movements of the platform enabling some work elements to be easily automated. The paper emphasizes the careful thought that requires to be given to selecting the correct type and size of unit. Also the mechanical aids that should be incorporated and plans for the collecting and dispersal yards. Efficient milking, good cow management and good labour use can be achieved only if cows board the platform of their own free will in a continuous stream. In order to achieve this it is important that the collecting yard and entry race be planned to a high standard.

摘要:
Problems of milk protein production and the effects of diet on milk secretion are considered. The process of digestion of dietary nutrients, and the hydrolysis of proteins to amino acids are described. Microbial fermentation in the digestive system of the cow and the effects on the mixture of nutrients derived from the food are shown in a table. The utilization of substrates in the udder and the mechanism for protein synthesis are assessed and a summary showing the outlines of mammary metabolism given. The paper discusses feeding under farm conditions in relation to energy nutrition and the importance of promoting milk secretion in early lactation is stressed. (Editor's summary)

摘要:
Recent success using concentrated single strain starters in Scotland is based on continuing research work mainly by the New Zealand Dairy Research Institute. The Institute has isolated groups of ‘phage unrelated single strain starters capable of producing good flavoured Cheddar cheese. These starters were concentrated and used to produce cheese on automated and mechanized equipment. The results are evaluated. Reliable acid production from the same starters used in refilled vats depends on adequate intermediate sanitation to control the phage levels to a predetermined level and the regular replacement of stock culture
