ABSTRACTLinoleic acid was oxidized by soybean lipoxygenases I and II (LOX‐I and LOX‐II). The monohydroperoxides (HPOD) formed were isolated and then hydrogenated. The mixtures of hydroxystearic acid isomers obtained were converted to phenacylesters and analyzed by HPLC. The isomers were identified on the basis of cochromatography with reference materials and mass spectrometry. It was shown that LOX‐II forms mainly the 9‐and 13‐HPOD (94%) and in addition the 8‐, 10‐, 12‐ and 14‐HPOD as minor components (6%) of the monohydroperoxide fraction. The minor hydroperoxides were absent when the catalyst was LOX‐I. The presence of the poly ene crocin in the reaction system containing LOX‐II changed the composition of the HPOD mixture. ABSTRACTAnatomical studies of the healthy corms ofColocasia esculentashowed an outer corky layer and inner cortex of mainly parenchymatous cells. The ethanol soluble carbohydrates were extracted and identified as maltose, sucrose, glucose and fructose. The two cultivars ‘ikpong’ and ‘cocoindia’ used in these studies also contain appreciable quantities of lipids, proteins and oxalate. The major carbohydrate component of the corm was starch. The two organisms, Botryodiplodia theobromaeandSclerotium rolfsii which were the most important rot pathogensofC. esculentapenetrated and colonised the corm tissue intercellularly and intracellularly. The infected cells were cleared of most of their starch grains and the cells disintegrated within ten days of inoculation. Apart from destroying the histological structure of the corms, the carbohydrate, protein and lipid contents were reduced on infection by both organisms. However, the oxalate content increased after infection byS.

ABSTRACTLeft sides of 10 beef carcasses were electrically stimulated at I h postmortem; right sides were not stimulated. Longissimus dorsi (LD) and trapezius (TP) muscles were removed from stimulated and nonstimulated sides after 1.5 and 24 h of chilling (0–2°C). Microsomal lipid peroxidizing activity (the amount of malonalde‐hyde produced per mg of microsomal protein) was not affected by electrical stimulation, was higher for muscles removed after 24 h chilling than for those removed after 1.5 h chilling, and was higher for TP than for LD muscles. ABSTRACTTempe was made according to a laboratory method giving the Indonesian product. At several stages samples were taken, trypsin inhibitors were extracted with different procedures (high pH, salt) and purified with affinity chromatography. A standard assay method for trypsin inhibitors showed large differences in the activity of the extracts. The purified samples were subjected to isoelectric focusing and sodium dodecyl sulfate‐electrophoresis, with which mainly Kunitz inhibitors were found. ABSTRACTSoft textured fillets from postspawning Atlantic cod caught during the influx of capelin exhibited significantly more drip than fillets from fish caught at other times of the 1983 inshore fishing season. The extent and rate of pH decline, protein, collagen and temperature of the muscle were not distinctive in fish caught during the influx of capelin. The muscle from these fish were unique in exhibiting a rapid and relatively low ultimate pH together with a stable pH after the onset of rigor mortis. The number of capelin present in the stomach of cod at the time of catch was positively related (r = 0.92) to the amount of free drip recovered from the fillets.
