London: This book contains a very large number of exhaustive analyses of butter from farms in Holland, which were expected to yield abnormal figures, and they are ably discussed. Two main facts are stated : Firstly, that genuine butters may give a Reichert-Wollny figure of 19, 18, or even 17; and, secondly, that a “rise [in Reichert-Wollny figure] begins shortly after the cows have been stabled.” The first fact, which has been known for years, is liable to great rnisinterpreta- tion, and more than one person has acquired the idea that “50 per cent. of all Dutch butters ” fall below 25 C.C. Reichert-Wollny. Read with proper understanding, this book shows nothing of the kind, and the author would probably be the first to admit this.The second fact, which has received confirmation, points to the remedy for low Reichert- Wollny figures, and ehows that, were a reasonable standard prescribed, it would be hut a matter of organization to comply with it. This has been brought quite up to date, references to I ‘ milk-blended butter ” and to the Board of Agriculture Milk Regulations being included. The list of High Court decisions is very complete, and copious and well-arranged indices render reference easy. .\mong the many legal works on the Food Acts none deserves a place in the Public Analyst’s Iibrary more than Mr. Rigginson’s.
